Ironbark Brewery was established in 2000 and is staffed by a friendly team with over a decade of experience.
Chief brewer Graeme White is passionate about his beers. He’s also passionate about creating the perfect environment in which to enjoy a cold beer on a warm Aussie afternoon. To Graeme, good beer, good food and good friends all enjoyed under a shady tree is the perfect way to spend an Aussie afternoon.
At Ironbark Brewery we pride ourselves on brewing the best beer in town. Our famous boutique beer range is a beer lover’s dream, winning two silver awards at the 2006 Melbourne Beer Awards.
History of the Ironbark Brewery
Located within the grounds of the old Valencia Winery a true atmosphere of Australiana has been created at Ironbark Brewery with Aussie memorabilia, blacksmith bellows, mouldboard plough table and 44 gallon drum tables randomly decorating the walled alfresco area.
Ironbark Brewery is boutique microbrewery that produces a unique and authentic range of beers and ales in the Swan Valley.
Director and head brewer Graeme White moved to the Valley 24 years ago with his family after farming at Brookton, Dandaragan and Newdegate. After many years devoted to other ventures, Graeme's burning passion for beer and hands-on involvement drove him to create his own full mash brewery.
After obtaining a Brewery Management certificate from Edith Cowan University three years ago, Graeme designed and built a full mash fifteen hundred litre brewery to brew beer the original way with premium yeasts, golden malts, high quality hops, concentrated ginger, no added preservatives and no sugar. In addition to the range of traditional boutique full-mashed hand-crafted beers such as Pilsner, Iron Bock and Wheat, Ironbark also produces brewery specialties such as the fruit-filled Cherry Ale, a sweet/tart beer that is particularly appealing to female patrons.
Another drink made famous in Fremantle between 1920-1970 is the "Tinny Thomas" Ginger Beer, which is now popularly brewed at Ironbark. Graeme miraculously found the old recipe and now brews and bottles the drink originally sold icy cold from the "Tinny Thomas" fancy cart at the Fremantle Railway Station in days gone by.
Graeme has made a real impact at the Valley due to his traditional style recipes and brewing techniques that uses adection mashing system. Different international speciality beers appear frequently on the drink card as Graeme sources malts from all around the world. As he is regularly on hand at the brewery Graeme is more than pleased to divulge tricks of the trade to keen samplers who at different times can try the ranges of ales, stouts, lagers, pilsners, wheat and ales on tap.
Ironbark Brewery now holds a Tavern Licence improving the breadth of service to its patrons and tourists.
